VISUALIZE! VISUALIZE!



In one of my weight watcher meetings our leader said Visualizing your goal and putting it on the refrigerator or making up a visual poster of your photos with your head on a model body type figure type you want to achieve, would be a great motivator. I have done this and here are some of the photos I have created, to help reach my goal. Try it yourself, I think you'll have fun doing it and also it has worked well for me in the motivation dept!














GOURMET PIZZA

The sweetness of the caramelized onions in this pizza contrasts wonderfully with the bitterness of the spinach, richness of the tomato and pungency of the cheese.

Ingredients

  • 2 large onion(s), vidalia , thinly sliced
  • 12 oz pizza crust
  • 10 medium sun-dried tomatoes, without oil
  • 3 oz hard cheese, Gargonzola
  • 10 piece spinach, washed and dried
  • 1/8 tsp black pepper, or to taste

Instructions

  • Coat a large nonstick pan with cooking spray. Warm pan over medium heat. Add onions and reduce heat to medium-low. Cook for 15 to 20 minutes, stirring frequently, until onions brown and become very fragrant.

  • Meanwhile, prepare pizza crust for baking according to package directions. Mince tomatoes and crumble cheese. Tear spinach into pieces. Preheat oven to 425°F.

  • Spread caramelized onions on pizza crust and bake for 12 minutes. Remove from oven and add tomatoes, spinach and cheese. Bake until cheese is melted, about 3 more minutes. Season with freshly ground black pepper and serve.

BAKED PASTA W/BUTTERNUT SQUASH RICOTTA

Baked Pasta with Butternut Squash and Ricotta

This pasta casserole is a hearty yet elegant combination of whole wheat penne, rich butternut squash, toasted walnuts, ricotta and Parmesan cheese.

Ingredients

  • 2 sprays cooking spray
  • 20 oz Butternut squash, fresh, peeled and cubed*
  • 1/8 tsp table salt, for cooking pasta
  • 12 oz uncooked whole-wheat pasta, penne
  • 1 1/4 cup fat-free skim milk
  • 2 Tbsp white all-purpose flour
  • 2 tsp minced garlic
  • 1/2 tsp table salt
  • 1/4 tsp black pepper, freshly ground, or to taste
  • 1 Tbsp thyme, fresh, chopped, divided
  • 1/2 cup part-skim ricotta cheese
  • 1/3 cup grated Parmesan cheese, Parmigiano-Reggiano recommended
  • 1/4 cup chopped walnuts, toasted

Instructions

  • Preheat oven to 375ºF. Coat a baking sheet with cooking spray. Coat a 2 1/2- to 3-quart baking dish with cooking spray.

  • Place squash on prepared baking sheet; roast until tender, about 20 to 30 minutes. Place in a large bowl and mash.

  • Meanwhile, bring a large pot of salted water to a boil. After squash has been roasting for about 10 minutes, cook pasta according to package directions; drain and return to pot.

  • In a medium saucepan, whisk together milk, flour, garlic, salt and pepper. Bring to a boil over medium-high heat, whisking frequently; reduce heat to low and simmer, stirring often, until thickened, about 2 minutes. Remove from heat; stir in mashed squash and 2 1/2 teaspoons of thyme. Add sauce to pasta; toss to mix and coat.

  • Transfer pasta mixture to prepared baking dish; dot with spoonfuls of ricotta and then sprinkle with Parmesan and walnuts. Bake until top is lightly browned in a few spots, about 15 to 20 minutes; remove from oven and sprinkle with remaining 1/2 teaspoon of thyme. Yields about 1 cup per serving.

  • Place squash on prepared baking sheet; roast until tender, about 20 to 30 minutes. Place in a large bowl and mash.

Notes

  • *Look for a 20 ounce bag of fresh, already peeled and cubed squash from your supermarket. If you can't find any, cut a medium squash in half lengthwise and place cut-side down on prepared baking sheet; roast until tender, about 45 minutes. Scoop squash out of skin into a large bowl, mash with a spoon and proceed as above.

    Alternatively, you can microwave cubed squash, covered, in a shallow microwave-safe baking dish or container with 1/4 cup of water, until cooked through; mash squash in a bowl.

Meat, cheese, potatoes—we layered these favorite ingredients into a flavorful casserole. Sort of like a deconstructed cheeseburger and fries.

Ingredients

  • 2 sprays cooking spray
  • 2 large Yukon Gold potato(es), boiled or steamed whole, drained and cooled
  • 1 medium garlic clove(s), minced
  • 1 small onion(s), chopped
  • 1 small green pepper(s), chopped
  • 1 cup mushroom(s), sliced
  • 1 pound lean ground turkey
  • 1/8 tsp ground cumin
  • 1/4 tsp table salt
  • 1/8 tsp black pepper, freshly ground
  • 2 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product, or similar product, cubed
  • 1/4 cup low-fat evaporated milk
  • 1/8 tsp crushed red pepper flakes
  • 8 items baked low-fat tortilla chips, crushed

Instructions

  • Preheat oven to 350ºF. Coat a 9-inch square baking dish with cooking spray.

  • Peel and thinly slice potatoes; layer in prepared baking dish. Bake potatoes until slightly crisp, about 10 minutes; remove baking dish from oven and set aside.

  • While potatoes are baking, coat a large nonstick skillet with cooking spray and warm over medium-high heat; add garlic, onion, green pepper and mushrooms. Cook, stirring frequently, until vegetables are tender, about 7 to 10 minutes; remove to a plate, cover to keep warm and set aside. Add turkey to skillet; cook until browned, breaking up meat with a wooden spoon as it cooks, about 8 to 10 minutes. Add cooked vegetables, cumin, salt and pepper to turkey and stir to combine; spread mixture over potatoes in baking dish.

  • In a small microwave safe bowl, combine cheese product, evaporated milk and crushed red pepper flakes; cover and microwave on high power until cheese melts, about 1 to 2 minutes. Spoon melted cheese over turkey and sprinkle with tortilla chips. Bake for 35 minutes; remove from oven and let stand for 5 minutes before slicing into 6 pieces. Yields 1 piece per serving.

This could happen to you!




I awoke this morning and filled my birdfeeders. By noon I noticed that no birds were outside my window. This concerned me. I told my husband, J.d. this is weird. My birds are just not coming this morning. Then I noticed a Big birdfeeder hanging on the other side of my fence at our new neighbors house. Ms. Hodshimoto - I don't really know her name, she looks like Yoko Ono so I just named her this. So I decided to investigate. I look between the cracks of the privacy fence, Yeah, I am nosey. I had to see where my birds went. There they were, Yoko had 5 bird feeders in different locactions of the yard. She was sitting in a chair watching the Big Show, My Big Show, now going on at her house. She was singing Sakurah! Sakurah! Yayoino, Sodowah!, Ezooo! Ezoo! Ezooooooooodroo!. I know the song, myself because I use to live in Hawaii and a friends mother use to sing this same song all the time. EWE! I go running into the house, about breaking my neck. Yelling, she stole my birds! J.d. Yoko stole my birds. He thought, what in the world is Lucy talking about now!!! Once he saw for himself and realized what I was saying, he got so tickled. He just said girl your going to have to step your game up! I'll keep you posted. I am heading to Lowe's this weekend and I am buying the birdfeeder dept out! This is down right WAR!

Good Old 917 Sandalwood dr.


My first years I remember were at 917 Sandalwood Dr. In Fayetteville, N.C. I was born in Fayetteville, N.C. and lived in the same house till the age of 7. Well, that white wood framed starter house, would look like the bottoms to me now. But to little Ole Tiny it was a mansion back then. With beautiful hardwood floors. I loved that house, and I loved my small world on Sandalwood Dr. I remember one day or could have been one night. I was over at a friends house, Mikey Hoffman. He really was my bestfriend because there were no girls my age on that street. We were buds. Well, we were watching t.v. that night or day one. And I get all excited. The Beverly Hillbillies comes on and I am astonished and shocked that it is playing on their t.v. I get all excited and announce to everyone in the room, By saying! Hey this comes on your t.v. too?? In my mind I am thinking NO WAY! They are looking at me like I am crazy. I am serious as a heart attack! You see, I thought that we were just like the Beverly Hillbillies when I was growing up and I actually thought they were my relatives and therefore how could they be on my friends t.v. Thank God I grew out of that one. Scary thought huh! I was really gullible as a child. My Father Mr. Teet, Use to pull some good ones on me. Like dip a bunny rabbits feet in mud and let it run all over Mamas waxed sparkling floors to convince us that the Easter Bunny had come. Or dress up like Santa, and of course I believed it was Santa Claus but my sister the eldest called out his name. Still, gullible Lil Tiny didn't get it at all!

I remember when I almost met my creator early at the age of 6 years old. I was playing with my sister Mary in an abandoned houses backyard. We were running around with our friends picking plums. Making a big game of it. First one to collect the most plums wins a prize. What the prize was, We all would never find out! I am standing under and old garage door. When suddenly it comes crashing down and hits me in the head, knocking me to the back of the garage and completely out. My sister Mary starts wondering where I am, she looks through the window of the garage and there I lay in a pool of blood coming from my head. Mary breaks the window and jumps in and carries me to the window and passes me to Mikeys older brother. Then the word gets to Daddy and he is at the fence waiting to carry me up and over it and home. I am bleeding profusely and crying and screaming am I dead yet Daddy, am I DEAD??? I could see the concern in his eyes. But he got me home, and he was an Army Medical Tech. And we were really poor, back in those days. So my Hero Teet stitched my head up himself! I kid you not! They kept me up all night to make sure I didn't have a concusion. I have never acted the same since the incident. Maybe it did do some damage, maybe not. I am still Thankful, but I do have a thing against PLUMS!

Meet the Three Stoogies! Nah, I am very proud of my sisters. Pat Lindsey is a proud mother of 2, and proud granny of 1. First and foremost a CHRISTIAN and her career is her heart also. Pat is a lactation consultant. Pat loves Babies and Mommies. Check out her website! Growing up with my sister Pati as I called her was wonderful. She was my second Mommie. Pati has always been called an little Adult when she was growing up, by family and friends. Because she was so intuitive and smart beyond her years. I was only 7 when Pati married and we were separated as my father was transferred to Nebraska. But I have fond memories of her protecting me and loving me as a child! Now though we still are separated by miles, I still look up to my second Mommie! Pats website

Mary, She is the middle stoog. Very talented! Mary owns her own Beefalo Ranch Buffalo - Black Angus Cattle in East Texas. Mary has always made me think of her as Ellie Mae Clampent. Swimming pool and all. She loves animals, and has a ranch full of you name it! I bet it exist on her ranch farm. Mary has accomplished alot in her life time, she is the proud mother of 2 girls and 4 boys. She has 4 grands. She is always studying for another degree and still working. I wish I had half her talents! There is nothing to little or to big for her to tackle, she is always up for a challenge!

Nicknames

Growing up a Straughn, Meant you had to have a nickname. Mine came before I was released from the hospital Tiny Straughn, Yeppers. It stuck too! To this day I am called Tiny. Even when I tipped the old scales at 200. I was still Tiny to my family! I am sure when I was at my highest weight and told people my nickname they thought wrong RABBIT this girl can't have that nickaname! Truly funny how we get our nicknames. My fathers nickname stuck with him all of his life by his family also. Teet Straughn. That's TEET, and it was because as a small child he was always saying I want something to teet! (eat) So there you have it Lil Mr Teet is now 84 years old and still got his mouth flaping open wide ready for something good to TEET! My oldest sister Pati's nickname was "Skin". Little Skinny Grill. That she got from Father Dearest! Because she was petite and a slim jim skinny minny till she married and started having babies, Like the rest of us girls. But not my sister Mary. Mary is the proud mother of 2 girls and 4 boys, Her nick name was bloomers Jane. Or Filthy Bloomers Jane. Seriously, she loved to play in the dirt and get her diapers filthy so the name came and stuck. Mary never has had a weight problem, she and my late Aunt Jackie always have maintained healthy slim figures. That Father of ours! He is actually the funniest man I have ever known. No one on television could hold a candle to this man. My goodness if he ever went into show business we would have been billionaires on his wit and comedian acts alone! He's still at it today with his story tellings, joking and pranks. I guess that's where I got my since of humor from. There is no barriers he and I don't cross when in a room together, He'll get it started and like 2 kids my Mother is yelling at he and I to stop it, you two stop it! The stuff we come up with I can't even repeat on this blog, because even as Christians it is quite colorful, I am sure God understands. We just like to have fun, and laughter is the BEST MEDICINE and it doesn't cost a dime!


Just the other day Father Dearest Teet was hunting in his own yard. Yes, right in Country Club Acres he called his two hunting dogs out Spec and Teri and first he thought he was going to shoot him a squirrel in the yard and train the young puppy how to retrieve the squirrel. Well as he got on the back side of there lot, he spy's a Giant BUZZARD coming straight for him. Self defense Jed Clampant has no choice but to point his 12 gauge up at that bird, that he says had 4 foot wing span, and Kaboom he lets it have it and he turns back around to watch it fall and that sucker is coming right at him and he swears if it would have hit him it would have killed him. This is just another day being TEET. I went hunting one time with him and he had this big satchel he wore over his shoulder, he wore it draping on his back. After he would kill a squirrel he would put the squirrel in the bag. On this particular hunting trip, the bag was growing full. I was having fun and he having even more FUN! All of a sudden I look and see a live squirrel crawling out of the bag on to his shoulder. My eyes are like saucers and I can hardly speak. Daaaaaaaaadddy, What he snarls, as he already is trying to beat his squirrel killing record. I said there is a live squirrel on your shoulder. It was so funny. I remember almost or maybe even peeing in my pants. He hit that sucker with butt of his 12 gauge and then retrieved it from the ground and back in the satchel it went. He said, I feel them wiggling in that bag all the time, but usually they quit and die. But not that one! He had other ideas, Like biting Daddy's ear or something!!
Many years ago, I was probably 18 years old. My father Mr. Teet was gone out of town on business with his job. Well, Lil Tiny (me) and Mama Lucille went to bed as usual and about 2:00 a.m. I get awoken by gun shots. I flew in to my mothers room, and to my shock NO MAMA to be found. I am scared to death now. Then shots ring out again! I am shaking in my boots and I am not even wearing any! I start running in circles and decide I best find my Mama and where these shots are coming from. I look out my window and see my Mother with the Moon shinning down on her under a big oak tree holding the 12 gauge shot gun. I fly out the front entrance door and say what in the world are you doing! Mama said I got tired of listening to that darned WHOOT OWL, so I decided to scare him. She had blown the top off that tree! I finally convinced her to come in and leave nature alone for that night! Oh the stories I could tell on Teet and Sweet Mama!

She's Special! My Mother!





My mother Lucille Dickens Straughn is one of the most inspirational persons in my life! Most babies when they are born the umbilical cord is cut. But I actually honestly believe mine never was! That's the kind of bond my Mother and I have. She was born in Sanford, North Carolina to a Tobacco Farmer and one of 7 children. Five boys and 1 sister. She lived in the country on sprawling green pastures and timberland. My mother lost her mother at very young age of 6. Her mother died of pneumonia and shortly after delivering her last son. So my Mother had to grow up fast and she became the Mother to her siblings. As a young woman in the photo above with my sister Pati she absolutely looks like a movie star! She met and married my father Richard Straughn in Feb. 1950. Oh, yeah back in those days people married fast! Daddy was in the service at Fort Bragg, N.C. he was a Louisiana man. After dating a short 1 month, Yes I said 1 month. They started there family off quickly also. Pati was born in Nov. 1950 and Mary Jane was born in Dec. of 1952. But little did they know that God wasn't finished with this perfect little family yet. Mr. Richard wanted a son. So 7 years later after Mary was born he gets a great idea that the family just was not complete with out a son. So Mama is with child, and not happy about it. Worried about how they could afford another mouth to feed and also she really thought there would be no more Straughn babies. But, Richard and God had different plans! So come Aug. 15th 1959 Lucille Mae Straughn : Aka Lucy, Aka Tiny makes her grand entrance all 7 lbs 14 ounces of her. Richard didn't get his wish of a boy, but he knew how to make his princess a clone of himself! I have his temperament, I have his eyes, He even made me a tom boy!

Growing up I was very blessed. I had sisters that adored me and a mother that devoted her life to being the best homemaker you could ask for. It actually was like having 3 Mama's when I was little. As my sisters were much older than me. Just anciently older than me! Ha! Just teasing sisters!

My mother instilled in us girls valuable tools that we carry with us today. To love and know the Lord. That honesty was always the best policy, And to be humble and always to be thankful for all that we had, and to share from our hearts with others less fortunate. My Mother and my Father taught me how to cook. They are the best southern country cookers ever! Wow, I miss my Mama's biscuits! Makes you want to slap your grandma! Mama now has to eat Daddy's and my cooking and my sisters when they are in town. As, Mama's health has severely declined. She is now on hospice. Even as she faces the end of her life. And prepares for her Eternal life. She inspires me with her strength and Faith, She is one tough MAMA! When she sees me, as she is bedridden now. She grabs my hand and kisses it sweetly with tears in her eyes she says I've missed you sweet and I love you! She and I cry often together, and we talk about the wonderful life we've had together and are still having through this trial. Lord knows Mama is my best friend even when I strayed as a teen and young woman in my twenties. Mama never gave up on me. She prayed and sent the guardian Angels out to protect me. And they always did. Now I am sending the guardian Angels to watch over her daily, to take away her pain and prepare her for the many mansions our Lord and Savior has prepared for her.

She also now has been diagnosed with Alzheimer's. The early stages. She now can not walk due to severe spinal stenosis that was uncorrected from surgery.

I was fortunate after my sisters married and moved off to travel the world with my parents. We lived in Hawaii for 4 years , and also the Philippines for 1 year. Traveled and lived in many states also. As I reflect back on my life, I am thankful for having two parents that loved each other and took there vow's as they are written In sickness and health! To death do us part! And even then, we will still reside in each others hearts till the Lord calls us home for the biggest party and celebration ever! Our reunion!
